Ingredients for Microwave Dhokla
For the batter
- ½ cup besan (gram flour)
- 2 tbsp semolina (rava/sooji) – optional, for extra sponginess
- 2 tbsp curd (plain yogurt)
- ¼ cup water (adjust as needed)
- ½ tsp ginger-green chili paste
- ½ tsp sugar
- ¼ tsp turmeric powder
- ½ tsp salt (or to taste)
- ½ tsp eno fruit salt (or ¼ tsp baking soda + 1 tsp lemon juice)
For tempering (tadka):
- 1 tsp oil
- ½ tsp mustard seeds
- 6–8 curry leaves
- 1 green chili, slit (optional)
- 2 tbsp water
- ½ tsp sugar
Instructions Step by step method to make Microwave Dhokla
- In a bowl, whisk together besan, semolina, curd, ginger-chili paste, turmeric, sugar, and salt.
- Add water gradually to form a smooth, lump-free batter.
- Just before steaming, add eno and mix gently. The batter will become frothy.
- Grease a microwave-safe mug with a few drops of oil.
- Pour the batter into the mug, filling it only halfway (it will rise).
- Microwave on high for 2½ to 3 minutes.
- Tip: Insert a toothpick — if it comes out clean, it’s ready.
- Heat oil in a small pan.
- Add mustard seeds, let them splutter.
- Add curry leaves and green chili, sauté for a few seconds.
- Mix water and sugar, pour into the tempering, and bring to a quick boil.
Pour this tempering over the mug dhokla. - Garnish with fresh coriander and grated coconut.
