DOUBLE TOFU CURRY
Ingredients
- 1 onion
- 4 cloves garlic
- 1 tbsp fresh ginger
- 2 tsp ground coriander
- 2 tsp turmeric powder
- 1 tsp ground cumin
- 1 tsp chilli powder
- 2 tbsp tomato puree
- 400g tinned chopped tomatoes
- 300g silken tofu
- 1 tsp garam masala
- 3/4 cup petit pois
- 400g super-firm tofu
- 2 tbsp cornflour (cornstarch)
- 1 tbsp curry powder
- Oil
- Salt
Instructions
- Rip up the super-firm tofu into chunks, then coat in the oil, followed by the cornflour and curry powder.
- Pop that in the air fryer at 200°c for 10-12 minutes until it’s got some nice crispy edges.
- In the meantime, add a splash of oil to a pan over medium heat and fry the onion for 5 minutes until softened.
- Throw in the garlic and ginger for 30 seconds, then add the coriander, turmeric, cumin & chilli powder and fry for a minute until fragrant.
- Stir through the tomato & silken tofu mix, then season with the garam masala and salt to taste.
- Once the sauce is ready, add the petit pois and stir for a minute, then stir in the tofu right before serving.
- Top with toasted almonds, fresh coriander or whatever else you’re feeling.
