- Add the mustard seeds. When they begin to pop and splutter, add the asafoetida and the
- slit green chilies.
- Immediately add the shredded cabbage and carrots to the hot oil.
- Add the turmeric powder and salt.
- Stir-fry on high heat for just 1 to 2 minutes. The goal is to just warm the vegetables and
- coat them with spices, not to cook them until they are soft.
- Turn off the heat.
- Add lemon juice if desired and give it a final toss.
- Serve immediately while it is still warm and crunchy.
