- First, heat 2 to 3 tablespoons of oil, ghee, or butter in a kadai or pan over medium heat.
- Once the oil is hot, add half a teaspoon of cumin seeds. Let them splutter and turn golden brown.
- Now, add the finely chopped onions and green chillies. Sauté them until the onions turn light pink and translucent. Don't let them brown too much.
- Next, add 1 teaspoon of ginger-garlic paste. Mix it well and sauté for 1 to 2 minutes until the raw smell disappears.
- Add the finely chopped tomatoes along with salt to taste. Salt helps the tomatoes cook faster. Cook the tomatoes until they become soft and pulpy. You can cover the pan for 2 to 3 minutes to speed this up.
- Once the tomatoes are well cooked, add a quarter teaspoon of turmeric powder, half a teaspoon of red chilli powder, and 1 teaspoon of coriander powder. Sauté these spices on low heat for about 30 to 40 seconds until they release their aroma and the oil starts to separate.
- Now, add the grated or crumbled paneer. Mix it gently with the spices. Be careful not to overcook the paneer, as it can become tough. Just mix it for 1 to 2 minutes.
- Stir in half a teaspoon of garam masala and, if you're using it, half a teaspoon of kasuri methi, crushed between your palms. Mix everything together thoroughly.
- Finally, add the finely chopped fresh coriander and give it one last good stir.
