Lentil, chickpea, and sweet potato curry

Method
- Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 5–7 minutes until soft and translucent.
- Stir in the garlic and ginger, cooking for 1 minute until fragrant.
- Add curry powder, cumin, and turmeric. Toast the spices for 30 seconds to release their flavors.
- Add the cubed sweet potatoes, rinsed lentils, chopped tomatoes, coconut milk, vegetable broth, and salt. Stir well to combine.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes, stirring occasionally, until lentils and sweet potatoes are tender.
- Stir in the chickpeas and fresh spinach (if using). Cook for an additional 3–5 minutes until spinach is wilted.
- Remove from heat. Add lemon or lime juice and adjust seasoning to taste.
