- Let the onion mixture cool slightly, then transfer to a blender. Add chopped tomatoes and blend into a smooth paste. Set aside.
- In the same pan, heat butter over medium heat. Once melted, add bay leaf, cloves, and cinnamon stick. Sauté for 30 seconds until fragrant.
- Add turmeric powder, red chili powder, coriander powder, and crushed kasoori methi. Stir and cook for 1 minute to release the aroma.
- Add the tomato-cashew puree and mix well. Cook for 3–4 minutes, stirring frequently, until the mixture thickens and oil begins to separate from the sides of the pan.
- Add salt, heavy cream, and water. Stir well and bring the gravy to a boil.
- Reduce heat to medium-low and add the fried cashew nuts. Cook for 1 minute to allow the flavors to meld.
- Just before serving, stir in chopped cilantro. Do not skip this step, as it enhances the dish’s appearance and freshness.
