- Heat oil in a pot and add the onions and garlic paste. Sauté until the onions become soft and transparent, and the raw smell of garlic disappears.
- Add the tomatoes and cook until they are soft and mushy.
- Add the vegetables and stir-fry for a couple of minutes. Then add about a cup of water and salt, and bring to a boil. Reduce the heat and let the vegetables cook until they are tender but still firm, with only about a quarter cup of water remaining in the pot.
- In the meantime, prepare the spiced coconut milk. Combine the coconut, coriander seeds, cumin seeds, peppercorns, turmeric, ginger, garlic, and green chillies in a blender with 1 cup of warm water. Blend until smooth. Strain the mixture through a fine mesh sieve or cheesecloth, pressing to extract as much yellow coconut milk as possible. Discard the solids.
- Once the vegetables are cooked, stir in the spiced coconut milk. Cook for another 5 to 10 minutes on low heat.
- If desired, add a couple of sliced green chillies for extra heat. Garnish with fresh coriander leaves before serving.
- Serve hot with rice or sourdough bread.
