- Soak the dried tamarind in 1 cup of hot water for 10–15 minutes until softened. Squeeze the pulp to separate seeds and extract the juice; discard seeds.
- Dry roast cumin seeds and black peppercorns in a pan over medium heat until fragrant and dark brown, stirring continuously to prevent burning; let cool slightly.
- Wash fresh mint and cilantro leaves, remove stems, and coarsely chop ginger and green chilies.
- Add tamarind pulp, fresh herbs, roasted cumin and black pepper, ginger, green chilies, sugar, black salt, and table salt to a blender. Add a small amount of water and blend to a coarse paste—avoid making it too fine.
- Chill 4–5 cups of water for at least one hour.
- Place a fine strainer over a large bowl or pitcher. Pour the blended mixture into the strainer and press firmly to extract the liquid, discarding the thick pulp.
- Add the strained liquid to the chilled water. Stir in lemon juice and mix well.
- Taste and adjust seasoning—add more sugar for sweetness, lemon for tang, or salt for balance.
- Garnish with boondi and serve chilled in glasses.
