- Wash and peel the carrots. Cut into 2-inch sticks (less than ¼ inch thick) by slicing into 2-inch pieces, halving them, removing the core, and slicing into sticks.
- Prepare the green chili by removing the stem, cutting it in half vertically, and removing the seeds and veins to reduce heat.
- Heat oil in a pan over medium heat. Once hot, add mustard seeds and let them splutter.
- Add asafoetida and, if using, curry leaves. Stir for 5–10 seconds until fragrant.
- Add the prepared carrots and green chilies. Mix well to coat with the tempering.
- Add salt, turmeric powder, and sesame seeds (if using). Stir to combine.
- Cover the pan partially and cook for 5–10 minutes, stirring occasionally, until carrots are 70% cooked and still crunchy.
- Remove from heat and add lemon juice. Mix well to combine.
- Serve warm or at room temperature as a side dish with dal, rice, roti, or snacks like fafda and gathia.
