- Melt the butter in a saucepan and carefully remove the milk solids. Continue heating until the butter turns deep yellow (almost brown, but not quite).
- Remove from heat and add the soy sauce (it will spit—be careful). Pour into a heatproof bowl and let cool for a few minutes. Grate in the garlic and mix in the chopped parsley. Set aside to cool.
- In a stand mixer with a dough hook, combine the flour and salt. Heat the milk to 50°C (120°F), then add the yogurt and sugar. Beat with a fork and check the temperature is below 30°C (85°F) before adding the yeast. Mix well.
- Add the milk mixture to the flour and knead for 4–5 minutes. Let the dough rest for 10 minutes, then knead again for 1 minute to bring it back together.
- Transfer the dough to a lightly oiled container, cover, and ferment at room temperature for 16–24 hours.
- After fermentation, divide the dough into 160 g pieces and shape into balls. Place on a floured tray, cover, and let relax at room temperature for 2–3 hours.
- Open each dough ball into the classic naan shape with your hands. If using a Roccbox, place on a floured peel and spritz the top with water.
- Preheat the Roccbox to its lowest setting with the flame turned down. Bake the naan in the front third of the oven, rotating as needed, for about 3 ½ minutes until puffed and charred in spots.
- As soon as the naan comes out of the oven, brush it liberally with the garlic butter and let rest for a few minutes before serving.
