Masala Khichdi in 5 Minutes

Masala khichdi also called vegetable fry rice is simple but heatly and hearty dish make it quicker

Ingredients
  

  • 2 cups cooked rice or khichdi
  • 1 tbsp oil or ghee
  • 1/2 tsp mustard seeds
  • 2 whole red chilies
  • 1 chopped onion
  • 1 chopped tomato
  • 1/2 cup green peas and chopped carrots
  • 1/4 tsp turmeric
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Coriander leaves and extra ghee for garnish

Equipment

  • Pan or Tawa
  • Pressure cooker
  • Mixing bowl
  • Spetuala

Method
 

  1. Heat oil in a pan. Add mustard seeds and red chilies.
  2. Once they crackle, add onions and cook till soft.
  3. Add tomatoes and cook until mushy.
  4. Add peas, carrots, and sauté.
  5. Add turmeric, chili powder, garam masala, and salt.
  6. Add rice or khichdi and mix well.
  7. Simmer for 2 mins, top with ghee and coriander.
  8. Serve with papad, buttermilk, or pickle.

Notes

Add grated cheese for a fusion twist.
- Add pav bhaji masala for street-style flavor.
