- Heat oil in a pan. Add mustard seeds and red chilies.
- Once they crackle, add onions and cook till soft.
- Add tomatoes and cook until mushy.
- Add peas, carrots, and sauté.
- Add turmeric, chili powder, garam masala, and salt.
- Add rice or khichdi and mix well.
- Simmer for 2 mins, top with ghee and coriander.
- Serve with papad, buttermilk, or pickle.
