- Preheat oven to 350°F (175°C). Coat 8 to 16 muffin cups with nonstick cooking spray.
- Prepare rice according to package directions, substituting vegetable broth for water.
- Let it cool slightly.
- In a large bowl, combine the cooked rice, thawed and drained broccoli, 1/2 cup of the Cheddar cheese, buttermilk dressing, and beaten eggs. Stir until well blended.
- Spoon the mixture evenly into the prepared muffin cups. Top each with the remaining 1/4 cup of Cheddar cheese.
- Bake for 25–30 minutes, or until the tops are golden brown and the edges are slightly crispy.
- Allow to cool for 5 minutes before removing from the pan. Gently run a knife around the edges to loosen if needed.
