Ingredients
  

  • 8 corn/flour tortillas
  • 1 cup black beans
  • 1 cup diced bell peppers
  • ½ cup corn kernels
  • 1 red onion chopped
  • 1 avocado sliced
  • ¼ cup cilantro
  • Juice of 1 lime
  • 1 tsp cumin powder
  • ½ tsp chili powder
  • Salt & pepper
  • Olive oil

Method
 

  1. Sauté onions & bell peppers in oil.
  2. Add corn, beans, cumin, chili powder, salt & pepper. Cook 5 mins.
  3. Warm tortillas.
  4. Assemble with filling, avocado, cilantro, lime.

✔ Use chipotle mayo or hot salsa
