Vagharelo Bhaat

Vagharelo Bhaat means "tempered rice." It's a delicious way to use up leftover plain rice. The rice is stir-fried with a simple tempering of mustard seeds, cumin, onions, garlic, and spices, transforming it into a quick and flavourful meal.

Ingredients
  

  • 2 cups cooked leftover rice
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • A pinch of asafoetida hing
  • 1 medium onion thinly sliced
  • 2-3 cloves of garlic finely chopped
  • 1-2 green chilies chopped
  • ½ teaspoon turmeric powder
  • Salt to taste
  • Chopped fresh coriander for garnish

Method
 

  1. If the leftover rice is lumpy, break up the lumps gently with a fork or your hands.
  2. Heat oil in a kadai. Add mustard seeds and cumin seeds.
  3. When they crackle, add asafoetida, green chilies, and garlic. Sauté for a few seconds.
  4. Add the sliced onion and cook until it turns translucent and light brown.
  5. Add the turmeric powder.
  6. Add the cooked rice and salt.
  7. Stir everything gently but thoroughly, ensuring the rice is well-coated with the tempering
  8. and heated through.
  9. Garnish with fresh coriander and serve immediately.

Notes

● This dish works best with cold, day-old rice, as the grains are firmer and less likely to
break.
● You can add other vegetables like peas or carrots along with the onions.
● A squeeze of lemon juice at the end can brighten up the flavours.
