  • 1 cup rice flour
  • 2 to 2.5 cups water
  • 1 tsp cumin seeds
  • ΒΌ tsp carom seeds ajwain
  • Salt – as per taste
  • 1 tsp green chili paste
  • A pinch of papad khar/baking soda optional
  • Oil – for drizzling
  • Pickle masala or chili powder – for serving

Method
 

  1. Boil water and add cumin, ajwain, salt, and green chili paste.
  2. Once water starts boiling, add rice flour in one go.
  3. Stir continuously to avoid lumps.
  4. Cook for 3–5 minutes until the mixture thickens into a soft dough.
  5. That’s it! Hot and fresh Khichu is ready.
