  • Water: 60 ml 1/4 cup

Method
 

  1. In a large skillet, heat 2 tablespoons of oil over medium heat until shimmering.
  2. Add the broccoli, cauliflower, carrots (if using), and garlic. Sear and stir-fry for 3 minutes, allowing the vegetables to develop a light golden color and the garlic to become fragrant.
  3. Pour in 60 ml (1/4 cup) of water and immediately cover the pan with a lid to create steam.
  4. Reduce the heat to medium-low and cook for 5–8 minutes, or until the broccoli turns bright green and the cauliflower is tender when pierced with a fork.
  5. Remove the lid and allow any remaining water to evaporate completely, stirring occasionally to prevent sticking.
  6. Season with salt and pepper to taste. For added freshness, stir in chopped fresh herbs just before serving.
