Neer Dosa Recipe

Neer dosa, an easy-to-digest, healthy and light dosa, is a traditional dish from the Tulu Nadu region. The word 'Neer' means water in the Tulu language. The specialty of this dosa is that it is prepared by making a thin batter of rice, without the need for fermentation.

Ingredients
  

  • 1 cup raw rice sona masoori
  • 1/4 cup grated coconut optional
  • Salt to taste
  • 1-2 tsp oil/ghee

Method
 

  1. Wash the rice thoroughly and soak it in enough water for 4-5 hours or overnight.
  2. After soaking, drain the water. Grind the soaked rice and coconut in a grinder with half a cup of water to make a smooth paste.
  3. Add salt and 1-2 cups of water to the rice paste to make a thin batter. The batter should have a very thin consistency, almost like water. You can adjust the amount of water as per your requirement.
  4. Heat a flat, non-stick pan over medium-high heat. Grease it with a little oil or ghee.
  5. Pour the batter from a distance onto the hot pan and swirl the pan quickly to spread the batter.
  6. Cover the pan with a lid for about a minute. The dosa will cook in the steam. You do not need to flip this dosa.
  7. Once the dosa looks transparent and cooked, carefully lift it from the pan.
  8. Serve hot with chutney, sambar, or any curry of your choice.
  9. Fold the dosa into a triangle or roll it and serve immediately.

Notes

Soaking: To make the dosa soft and fluffy, it is very important to soak the rice well.
* Batter: The batter should be very thin.
* Cooking: Cook the dosa on a non-stick pan. Do not flip it.
* Serving: Serve it hot with your favorite chutney or curry.
