Methi Aloo Gajar Ki Mix Sabji also called Methi Aloo Gajar Stir-Fry (Fenugreek, Potato & Carrot Dry Curry)

Ingredients
  

  • 3 tbsp mustard oil
  • ¼ tsp salt for tempering
  • 1 tsp cumin seeds
  • 3 potatoes diced
  • 2 carrots diced
  • 1 cup chopped methi leaves
  • ½ tsp salt for methi
  • ¼ tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • ¼ tsp garam masala
  • Salt to taste
  • ½ tsp amchoor powder

Equipment

  • Kadai or deep pan
  • Sharp knife & chopping board
  • Lid for cooking

Method
 

  1. Heat mustard oil in a pan. Add salt and cumin seeds. Sauté for a few seconds.
  2. Add carrots and potatoes. Cover and cook for 5–6 minutes.
  3. Soak chopped methi in salted water for 15 minutes, then drain.
  4. Add methi to the pan. Stir in all the spices except amchoor.
  5. Cook until veggies are fully done.
  6. Sprinkle amchoor powder, mix, and serve hot.
