- Heat mustard oil in a pan. Add salt and cumin seeds. Sauté for a few seconds.
- Add carrots and potatoes. Cover and cook for 5–6 minutes.
- Soak chopped methi in salted water for 15 minutes, then drain.
- Add methi to the pan. Stir in all the spices except amchoor.
- Cook until veggies are fully done.
- Sprinkle amchoor powder, mix, and serve hot.
