Prepare the Dabeli Masala: Dry roast all the masala ingredients until fragrant. Let them
- cool and grind into a fine powder.
- Prepare the Filling: Heat oil in a pan. Add the chopped onion and sauté until translucent.
- Add the prepared Dabeli masala and sauté for a minute.
- Add the mashed potatoes, tamarind-date chutney, and salt. Mix everything well and cook
- for 2-3 minutes. Let the filling cool down.
- Assemble the Dabeli: Take a pav and slit it horizontally, keeping one edge joined.
- Spread tamarind-date chutney on one inner side and garlic-chili chutney on the other.
- Stuff a generous amount of the potato filling inside the pav.
- Press the outer edges of the stuffed pav into the masala peanuts, sev, and pomegranate
- seeds to coat them.
- Heat a tawa and melt some butter.
- Toast the prepared dabeli on the tawa on both sides until it's light brown and crisp.
- Serve immediately.

You can buy ready-made Dabeli masala from most Indian grocery stores.
