BLACK BEAN ENCHILADAS

Oven-baked rolled tortillas filled with beans & topped with sauce and cheese.

Ingredients
  

  • 6 small tortillas
  • cups cooked black beans
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 1 cup corn
  • ½ cup onions
  • 1 tsp cumin
  • Salt to taste

Equipment

  • Mixing bowl
  • oven

Method
 

  1. Mix beans, corn, onions, cumin.
  2. Fill tortillas, roll, and place in baking tray.
  3. Pour enchilada sauce & cheese on top.
  4. Bake at 180°C (350°F) for 20–25 mins.

Notes

✔ Use spinach or mushrooms in filling
✔ Top with sliced olives or jalapeños
