Ingredients
  

For the outer cover:
  • 2 cups all-purpose flour maida
  • 3 tbsp oil for shortening
  • Salt to taste
  • Water as needed
For the stuffing:
  • 1 cup gram flour besan
  • 2 tbsp oil
  • 1 tsp ginger-green chili-garlic paste
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • 1 tsp coriander-cumin powder
  • 1 tsp garam masala
  • 1 tsp sugar
  • Salt to taste
  • Juice of 1 lemon
  • Fresh coriander leaves – finely chopped

Method
 

To prepare the stuffing:
  1. Heat oil in a pan.
  2. Add ginger-green chili-garlic paste and sauté.
  3. Add gram flour (besan) and roast on low flame until fragrant.
  4. Now add all the spices, salt, sugar, lemon juice, and chopped coriander. Mix well.
  5. Let the stuffing cool.
To shape and fry kachoris:
  1. Take small balls from the dough and roll lightly.
  2. Place stuffing in the center, seal properly, and shape into round kachoris.
  3. Deep fry on medium flame until golden brown and crisp.
